Introducing EFNEP in Henderson County

Greetings Everyone,

My name is Tikiyha P. Ancrum and I am the new EFNEP Program Assistant in Henderson County. EFNEP stands for the Expanded Food and Nutrition Education Program. This program is a federally funded program conducted through the N.C. Cooperative Extension Service administered through NC State University and N.C. A&T State University.

EFNEP’s mission is to improve the health of limited resource youth and families with young children through practical lessons on: basic nutrition and healthy lifestyles, resource management, and food safety. The program focuses on helping families and youth improve behaviors in the following areas: Dietary Intake as recommended by the Dietary Guidelines and MyPlate, Food Resource Management skills and practices, Nutrition Practices and Food Safety practices. My audience focus is Youth (75%) and Adult (25%). I’m currently providing lessons for Dana Elementary and the Mountain Community School. What I hope to accomplish as an EFNEP educator is to:

  • Create a fun, open, and productive learning environment for my participants;
  • Provide adequate teaching so that most (if not all!) of my participants are able to incorporate a nutrition-related skill that’ll last a lifetime.

In order to make all this possible, this curriculum creates a need for demonstration supplies. My program is in need of donations! Any help would be great! Here is a list of donations to continue to make this work possible:

  • Paper cups
  • Paper plates
  • Fresh vegetables and fruit (enough for 180 kids)
  • Money to purchase food for sampling recipes
