As the gardening season comes to a close, you may still have a tomato or two to turn into a delicious, nutritious recipe. If so, you're in luck!
The following is a recipe that's been a favorite at the Henderson County farmers markets this season. The greatest compliment was when a gentleman whose grandparents came from Italy asked for seconds!
However, all the credit goes to the delicious fresh tomatoes and basil from our local growers. Make sure to take advantage of the last few weeks of the market season and try some of their fantastic produce!
Fresh Bruschetta
Yield: 2-4 servings
Ingredients:- 1/2 loaf French bread, cut into slices
- 1 TBSP olive oil, separated
- 2 tomatoes, diced
- 1/4 cup basil, chopped
- 1/2 TBSP garlic, minced (or garlic powder)
- 1/2 TBSP balsamic vinegar
- Pinch salt
- Pinch pepper
- 2 oz grated Parmesan cheese
Directions:
- Preheat oven to broil
- Brush bread slices with 1/2 TBSP oil and place on a baking sheet
- Toast bread until crispy (about 2-3 minutes)
- Mix remaining ingredients together in a bowl
- Spoon mix onto toasted bread and enjoy!
