I Love Food!

As a nutrition teacher, I get the wonderful opportunity to work with food on a regular basis, and I can honestly say that "I Love Food!"

Each Expanded Food and Nutrition Education Program (EFNEP) class involves a delicious and nutritious recipe, so I thought that I would share my favorite recipe from our adult classes: Chicken and Broccoli Quiche.

Chicken and Broccoli Quiche


Yield: 2 quichesIngredients:
  • 4 eggs
  • 1 cup low-fat or skim milk
  • Salt and black pepper, to taste
  • 1/2-3/4 teaspoon garlic powder
  • 10oz frozen, chopped broccoli
  • 1/4 cup shredded carrots
  • 1/4 cup chopped onion
  • 3/4 cup cooked, chopped chicken
  • 3/4 cup reduced-fat shredded cheese

Directions:
  1. Preheat oven to 350F
  2. In a mixing bowl, combine eggs, milk, salt, pepper, and garlic powder. Mix well
  3. Place frozen broccoli in microwave. Cook according to package directions. Pour off liquid. Let cool, then squeeze broccoli to remove more water. Mix broccoli with carrots and onions
  4. Layer the meat, vegetables, and cheese into pie dishes. Pour the egg mixture over the ingredients
  5. Bake at 350F for 30-40 minutes or until top is browned and a knife inserted in the center comes out clean
  6. Let stand 5 minutes before cutting
