Let's Celebrate Potato Day!

August 19 is Potato Day!

Potatoes are great sources of potassium and fiber. Potassium promotes nerve, muscle, and heart health. Fiber helps our digestive system and helps us feel full longer. Fiber may also reduce the risk of diabetes, obesity, and heart disease.

For an oven-free baked potato, try this recipe:

Micro-Baked Potato


Yield: 1 serving

Ingredients:


  • 1 medium baking potato

Directions:


  1. Wash baking potato.
  2. Pierce potato with fork several times.
  3. Place potato in microwave on a microwave-safe plate.
  4. Microwave on high for 6 minutes, or until soft.
  5. Remove from microwave and wrap in aluminum foil and let sit for 20-30 minutes before serving. The potato will continue to cook during this time.
For some healthy ways to top your baked potato, try:
  • Smashed or sliced avocado
  • Low-sodium salsa
  • Homemade pesto (to promote the use of herbs instead of excess salt)
  • Canned vegetables, such as low-sodium corn and black beans
  • Cooked vegetables, such as sautéed spinach, grilled onions and peppers, or even broccoli and low-fat cheese
  • For extra protein, try scrambled or poached eggs
