It is peach season here in Henderson County and we have some amazing farms growing fresh local peaches.
Did you know that a single peach provides 6% of your daily vitamin A needs and 15% of daily vitamin C needs? One medium peach also contains 2% or more daily value of vitamins E and K, niacin, folate, iron, choline, potassium, magnesium, phosphorus, manganese, zinc and copper.

Peach Salsa
Finely dicing peaches in addition to some peppers (sweet or hot), topped with some chopped cilantro, lime juice, and salt is a refreshing take on a pico or salsa dish. Try serving it on top of these
fish tacos!
Peach Caprese
One of my favorite ways to eat peaches is in the form of a caprese salad. I start by alternating between peach slices and cheese slices (mozzarella is traditional but I also use a sharp cheddar sometimes) in a serving dish and top with fresh basil leaves, balsamic vinegar, salt, and pepper. I love to throw some pistachios on top for a little crunch. A simple and delicious crowd-pleaser!
Grilled Peaches
Next time the grill is fired up, throw some peaches on there! Cut peaches in half, remove the pits, brush cut sides with olive oil, and place cut side down on the grill for 3-5 minutes or until a char forms. These grilled peaches make a perfect side dish, thrown on top of a salad or served as dessert with some toasted nuts and vanilla ice cream!
