National Watermelon Day

August 3rd is National Watermelon Day!

A summer classic, melons are not only delicious, but very good for us. Melons contain vitamins A and C, which help maintain vision and skin health, heal cuts and wounds, and lower risk of infections. They also contain antioxidants that help protect cells and may decrease risk for heart attack, certain cancers, and other diseases.

There are so many delicious ways to celebrate this tasty holiday. Find a watermelon patch or farmers market and pick your own watermelon to bring home and then:
  • Slice, chop, or even scoop watermelon to serve as a snack or side dish
  • Scoop watermelon into balls and freeze. Enjoy as a chilly snack or even add to drinks in place of ice
  • Mix watermelon with low-fat yogurt or cottage cheese for a fresh, creamy treat
  • Or try this delicious recipe:

 

Watermelon Salsa


Yield: 6 servings

Ingredients


  • 3 cups watermelon, seeded and chopped
  • 1/2 medium onion, chopped
  • 1/2 bell pepper, chopped
  • 1 tablespoon jalapeño pepper, seeded and chopped
  • 2 tablespoons cilantro, chopped
  • 2 tablespoons lime juice
  • 1 teaspoon vegetable oil

Directions


  1. In a medium bowl, mix all ingredients.
  2. Serve immediately or cover and refrigerate for up to 1 hour to allow flavors to blend.
