In the hectic pace of our daily lives, it can seem a daunting task to make dinner at home. Sometimes we find ourselves running from work to the school pick-up line to sports practice to a faith-based event and, suddenly, we find ourselves in the drive-thru line instead of eating at home. While that is understandably sometimes our only option, here is a healthy--and quick!--alternative to consider.
In the time it takes to drive to the fast food restaurant, wait in line, drive back home, then unpack and begin to eat, you could have a homemade meal for a fraction of the cost!
Oven-Baked Chicken Nuggets and Sweet Potato Fries
Ingredients:
- 4 sweet potatoes, washed and peeled
- 2 tablespoons oil
- 1 egg
- 2 tablespoons low-fat milk
- 2 3/4 cups cornflakes
- 2 tablespoons Italian seasoning
- 1 pound boneless, skinless chicken breasts, chopped into nugget-sized pieces
Directions:
- Preheat the oven to 475F
- Cut potatoes into long strips and toss with oil in a bowl
- Place fries on greased baking sheet and bake for 20 minutes
- While fries bake, whisk the egg and milk together in a small bowl with a fork, then pour into a sandwich bag
- Place cornflakes and Italian seasoning into another sandwich bag and crush (kids love to help with this part!)
- Remove the fries from the oven and turn them over on the pan. Return them to the oven and bake 15 more minutes
- While fries cool, reduce the oven to 400F
- Dip chicken into the bag with egg, then drop them into the bag with cornflakes
- Put the coated chicken on a greased baking sheet and bake for 15 minutes (or until chicken reaches 165F)
- Serve and enjoy!
