Celebrate One Giant Leap for Mankind

On July 20, 1969, Astronaut Neil Armstrong became the first human to set foot on the moon. 2024 marks 55 years since that incredible accomplishment, so we should celebrate!

Help your little astronauts make these out-of-this-world muffins and practice their 'giant leaps' by taking a family walk or run. Mini Martian Muffins

Yield: 56 mini muffins

Ingredients:
  • 1 egg
  • 1/4 cup + 2 tablespoons brown sugar
  • 1/4 cup applesauce
  • 1/4 cup orange juice
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/4 cup unsweetened cocoa
  • 1 medium zucchini, grated
  • 1/4 cup low-fat yogurt
  • 1/4 cup nut or seed butter

Directions:
  • Preheat oven to 350F
  • In a large bowl, beat eggs, brown sugar, applesauce, orange juice, and vanilla extract
  • Combine the flour, cinnamon, baking soda, salt, nutmeg, and cocoa in a separate bowl. Gradually add to egg mixture and mix well
  • Stir in grated zucchini
  • Fill muffin pans 2/3 full. Bake for 20-25 minutes
  • Remove muffins from pan and allow to cool
  • Mix together yogurt and nut or seed butter to create a frosting. Spread on top of cooled muffins
  • Serve and enjoy!
