Workshop flyer imageN.C. Cooperative Extension of Rutherford County will conduct a series of home food preservation workshops this summer for anyone interested in canning, freezing, and dehydrating. The series will begin on May 9, 2019, with an Introduction to Food Preservation. This first session will provide an overview of food safety principles, all methods of food preservation, and equipment care and use and is highly recommended for beginners and anyone planning to attend the hands-on workshops.

Hands-on workshops offer an opportunity to practice specific techniques such as making pickles, relishes, beef jerky, and fermented foods. Freezing and dehydrating skills will be covered at the June 11 workshop where participants will try their hand at making jerky, drying fruits and vegetables, and preserving herbs. The Pickling workshop on July 18 will cover relishes, chutneys, and fruit pickles. At the Fermentation workshop on August 15, participants will make kombucha (fermented tea), kimchi (fermented vegetables), and learn about creating starter cultures.

Each session is only $5 and participants may choose either a day class from 1–4 p.m. or an evening class from 5–8 p.m. Registration is due one week in advance of each session.
